Treat yourself with Saragossa’s special Mulberry Jam



We’re here today with another tasty, delectable Saragossa Game Reserve special to tantalize your taste buds. Mulberries occupy an iconic spot in South Africa, with every child running to the tree when berries sprout, eager to taste the delectable morsels. A sweet/tart berry similar to blackberries overseas, they make a delectable jam for morning breakfasts with toast and coffee on the veranda. While we can’t promise you’ll have the same gorgeous view of wild animals to behold when you’re back home, this super-simple jam will still bring back sweet memories of your time on the reserve.

What you’ll need:

  • A pot with water for sterilizing, tongs and a towel
  • Jam jar and lid
  • 2 ½ cups of mulberries [don’t worry about the tiny green stems, but no leaves or long stems]
  • 1 ½ cups of granulated sugar
  • 3 tbsp water

What to do:

It couldn’t be easier! Use a boiling pot of water to sterilise the jars. Carefully place your jars [and lids] in the water with the tongs, and allow the water to do its thing for at least 10 minutes to prep the jar. When it’s done, lift clear with the tongs and place on the towel to cool off and drip dry.

In a medium-sized saucepan with a thick bottom, bring your berries, sugar and water to the boil. Allow to boil vigorously for a minute, then drop to a slow simmer. Cook thoroughly, with much stirring to prevent the bottom catching, until any foam subsides and the mixture has thickened a bit. This should take around 7 minutes.

Carefully, using a ladle or similar deep spoon to avoid burning yourself, transfer the mix to the jar. Wipe the mouths clean of all debris, and screw down the lids tightly. Allow the fruits of your labour to cool on the countertop, not in the fridge, for best results. The jam can be used the next day, or after at least 8 hours of standing time. Once opened, each batch will last about 3 weeks in the fridge, giving you plenty of time to enjoy. Sealed jars will last indefinitely as long as they aren’t opened or exposed to air, and store well in a cool cupboard or pantry.
